# Directions:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - Pierce sweet potatoes several times with a fork. Rub with olive oil, salt, and pepper. Place on baking sheet and roast for 35–40 minutes until tender.
03 - While potatoes roast, heat 1 tablespoon olive oil in a skillet over medium heat. Add red onion and sauté 3 minutes until softened. Add garlic, cumin, smoked paprika, and chipotle. Cook 1 minute more until fragrant.
04 - Add black beans, vegetable broth, salt, and pepper. Simmer 8–10 minutes, mashing some beans for thicker texture. Stir in lime juice and keep warm.
05 - Mix tomatoes, red onion, jalapeño, cilantro, lime juice, and salt in a bowl. Toss well and set aside.
06 - Once cooked, split each sweet potato open. Fluff the flesh with a fork.

08 - Serve immediately.

# Expert Tips:

01 -
  • It tastes indulgent and restaurant-quality but requires zero fancy technique or special equipment.
  • Your gut will thank you for all that fiber, but honestly, you'll be too busy enjoying how good it tastes to think about digestion.
  • The toppings are completely customizable, so picky eaters and adventurous ones can sit at the same table happy.
02 -
  • Mashing only some of the beans is the secret move—whole beans stay distinct and creamy beans provide cohesion, but if you mash them all, you end up with bean paste instead of a proper topping.
  • Don't assemble everything until the moment you serve, because warm beans on cold salsa or warm beans that wilt cilantro instantly changes the whole texture and brightness of the dish.
03 -
  • Pierce the sweet potatoes several times before roasting—this prevents them from exploding in your oven, which I learned by listening to a very loud pop and finding potato skin on my oven ceiling.
  • Keep the lime wedges until the very end because squeezing fresh lime juice right before eating brightens everything instantly and makes the flavors pop in a way you can't achieve by mixing lime juice in advance.
